White Chocolate Dipped Strawberries
This is very elegant and delicious!
1 quart fresh strawberries
1/2 pound fine quality white chocolate
Select perfect firm but ripe berries. Wash, drain and leave green hull on berries. Be sure berries are dry before dipping into chocolate.
Prepare white fine quality chocolate, by placing it in a glass measuring cup. Set cup in warm water in electric skillet. White chocolate melts very quickly. Do not overheat. Holding by stem end, very quickly dip each berry about halfway into the chocolate. Place on plate, chill immediately.
To serve: Fasten berries to a 12-inch foil covered cone with wooden picks. Start with largest berries at the bottom with chocolate tips pointing down. Fill in gaps with tiny pink ribbons.

Cheese Pie
This pie is as rich as cheese cake but creamier.
1 (9-inch) graham cracker crust
12 ounces cream cheese, softened
2 eggs
3/4 cup granulated sugar
2 tablespoons vanilla extract or 1/2 teaspoon almond extract
1 cup sour cream
3 1/2 tablespoons granulated sugar
1 teaspoon vanilla extract
Prepare pie crust. Combine cream cheese, eggs, 3/4 cup sugar and 2 teaspoons vanilla or almond extract and beat until light and fluffy. Pour filling into pie crust and bake at 325 degrees F for 28 minutes. Remove from oven; cool.
Mix sour cream, 3 1/2 tablespoons sugar and 1 teaspoon vanilla extract and spread on top of pie. Bake at 325 degrees F for 10 minutes. Cool; refrigerate for several hours before serving.

Fenwick Catering Red Beans and Rice

Yield: 8 to 10 servings
1 pound dried red kidney beans
2 quarts water
6 tablespoons bacon drippings, divided
4 cloves garlic, minced
1 large onion, chopped
2 green bell peppers, chopped
2 red bell peppers, chopped
6 to 8 ribs celery, chopped
1 to 1 1/2 quarts water
1 (16 ounce) can tomatoes, chopped (reserve juice)
1/2 teaspoon red pepper flakes
1 teaspoon dried thyme leaves
1/4 pound diced ham
2 pounds hot smoked sausage, cut into 1/4-inch slices
Salt and pepper to taste
Cooked rice
Wash and pick over dry beans. Combine with 2 quarts water and soak overnight.
In a pot, heat 4 tablespoons bacon drippings. Add garlic and chopped vegetables; saut? lightly. Add remaining water.
Drain beans and add to pot. Stir in pepper flakes and thyme leaves. Bring mixture to a slow boil. Reduce heat to simmer.
In a skillet, saut? ham and sausage with remaining bacon drippings. When meat is lightly browned, add to stockpot. Continue cooking for about 45 minutes, or until beans are tender but not mushy. Season with salt and pepper and, if desired, more red pepper flakes. Serve with rice.

Fudgy Chanukah Cake
1 1/2 cups firmly packed brown sugar
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder, sifted
1 1/2 teaspoons baking soda
3/4 teaspoon baking powder
1 pinch cinnamon
1 pinch salt
1 egg
1 egg white
3/4 cup buttermilk
3/4 cup strong coffee
1/3 cup vegetable oil
Icing
1/4 cup unsweetened cocoa powder, sifted
4 teaspoons granulated sugar
4 teaspoons cornstarch
1/2 cup skim milk
1/4 cup corn syrup
1 teaspoon vanilla extract
Edible gold glitter (optional) or coconut
In bowl, combine brown sugar, flour, cocoa, baking soda and baking powder, cinnamon and salt.
In separate bowl, beat together egg and egg white; beat in buttermilk, coffee and oil. Make a well in sugar mixture; pour coffee mixture into well and whisk just until blended. Pour into greased 8-inch square cake pans. Bake at 350 degrees F for 30 to 40 minutes or until tester inserted into center comes out clean and cake springs back when pressed. Let cool in pan on rack for 20 minutes. (Cake can be frozen up to 2 months)
Icing: In small saucepan, combine cocoa, sugar and cornstarch. Whisk in milk until blended, then corn syrup and vanilla extract. Bring to boil over medium-high heat, whisking constantly, reduce heat to low and cook, whisking for 1 to 2 minutes or until thickened and glossy. Let cool for 5 minutes. Spread evenly over cake. Sprinkle with glitter if using.
Makes 12 servings.

Deep Fried Corn on the Cob
Oil for deep frying
3/4 cup cornmeal
1/2 cup grated Parmesan cheese
1/3 cup all-purpose flour
1/2 to 3/4 teaspoon garlic salt
3/4 cup milk
2 tablespoons vegetable oil
1 egg
2 packages Green Giant Nibblers Frozen Corn-on-the-Cob, thawed
1 cup cornflake crumbs
In deep fat fryer or heavy saucepan, heat oil to 375 degrees F.
In medium bowl combine cornmeal, Parmesan cheese, flour, garlic salt, milk, oil, and egg; mix well. Dip ears into cornmeal batter to coat; roll in cornflake crumbs. Fry in hot oil 2 to 3 minutes or until lightly golden brown. Drain on paper towels. Serve immediately.
Yields 12 servings.

Easy Chicken Enchilada Casserole
Serves 4 to 6.
3 large cans chicken chunks
1 (8 ounce) bag grated Cheddar cheese
Medium or large bag tortilla chips
1 can cream of chicken soup
1 can enchilada sauce (same size as soup)
Large can refried beans
Small onion
Preheat Dutch oven and lid over fire. Line bottom and sides of Dutch oven with foil to minimize clean up. Cover bottom of foil-lined Dutch oven with tortilla chips, standing some up on sides. Save some for top and for eating later.
Gently heat refried beans in small pan, adding a little water to thin a bit, stirring constantly to avoid burning. Spread spoonfuls of refried beans over the chips as evenly as possible. Crumble chicken into smaller chucks and spread evenly over the chips and beans.
Chop half a small onion, more or less, into small pieces and sprinkle over other ingredients
Mix together enchilada sauce and soup (use same pan as beans to save cleanup). Heat and stir until smooth. Pour sauce mix over chips, beans and chicken. Top with even layer of grated cheese.
Bake in Dutch oven with medium heat, coals top and bottom, for about 30 minutes until hot through and cheese has melted.
NOTE: If desired, add chopped tomatoes before cheese layer.
Serve with extra chips.

Fresh Coconut Cream Pie
2 cups milk
1/2 cup granulated sugar
Pinch of salt
3 tablespoons cornstarch
4 egg yolks
1 teaspoon water
1/2 cup grated fresh coconut
1 tablespoon butter
1/2 teaspoon vanilla extract
1 (9-inch) baked pie shell
Combine milk, sugar and salt in a double boiler and bring to a near boil. Blend cornstarch, egg yolks, water, and add to milk mixture. Add coconut. Cook over hot water until custard thickens. Add butter and vanilla extract. Cool. Top with meringue or whipped cream.
Meringue
4 egg whites
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 cup granulated sugar
1/2 cup grated fresh coconut
Beat egg whites with cream of tartar and salt until soft peaks are formed. Gradually add sugar, beating constantly. When meringue is fairly stiff, pile lightly onto filled pie. Be sure to seal edges. Sprinkle coconut on top. Bake at 400 degrees F for 10 minutes or until lightly browned.

Knock You Nakeds
1 (18 1/2 ounce) package German chocolate cake mix
1 cup chopped pecans
1/3 cup plus 1/2 cup evaporated milk, divided
3/4 cup butter, melted
60 vanilla caramels, unwrapped (one 14 ounce package)
1 cup semisweet chocolate chips
In a large mixing bowl, combine dry cake mix, pecans, the 1/3 cup evaporated milk and melted butter. Press half of the batter into the bottom of a greased 13 x 9-inch glass baking dish. Bake in a preheated 350 degree F oven for 8 minutes.
In the top of a double boiler over simmering water, melt caramels with remaining 1/2 cup evaporated milk. When caramel mixture is well mixed, pour over baked layer. Cover with chocolate chips. Pour remaining batter on top of morsels. Return to preheated 350 degree F oven and bake for 18 minutes. Let cool before cutting into squares.
Makes 16 to 20 bars.

Red Chile Wash
You can rub this onto seafood and meats before smoking, use it in marinades, sauces and mayonnaise, and coat foods before grilling.
1 cup dried New Mexico Red Chile Pur?e
2 tablespoons honey
1 tablespoon Dijon mustard
1/2 teaspoon dried Mexican oregano, crumbled
2 garlic cloves, peeled and pressed
1/2 teaspoon ground toasted cumin seeds
Mix all ingredients together, then use immediately or cover and refrigerate for up to 3 days or freeze for up to 2 months.

Spicy Cheese Popcorn
1/4 cup butter or margarine, melted
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
8 cups popped corn
1/4 cup grated Parmesan cheese
Combine butter, paprika, chili powder, garlic salt and onion powder. Pour over popped corn; stir to coat popcorn evenly. Turn mixture onto baking sheet. Bake at 325 degrees F for 7 to 10 minutes, or until crispy; stir once. Sprinkle with cheese and toss to coat evenly. Let stand on baking sheet, stirring once or twice as mixture cools.
When thoroughly cool, divide into sandwich bags.
