Caramel French Toast

Katie, I now know why your family loves this recipe. My family (including the Chinese wife who normally does not like western breakfasts) loved it too!! I liked the added touch of the extra vanilla and corn syrup (I used the dark type)–yummy!!!
This time around, I didn make any changes. I was originally going to add some fruit on top like you did, but didn have any around. Thanks for posting one of the best French toast recipes Ive ever had. Regards, Cookin Dad
Serving size: 6
1 loaf French bread
1 stick butter
1 cup brown sugar
3 tablespoons Karo Syrup
6 eggs
1 1/2 cups milk
1 tablespoon vanilla extract
Cinnamon
Fresh fruit
Melt butter and brown sugar and Karo syrup over medium heat stirring. Bring to boil and then pour into 9 x13-inch casserole pan. Slice bread into 1 inch widths and lay over caramel mixture. Mix eggs and milk and vanilla and pour over bread. Sprinkle top with cinnamon and cover with plastic wrap. Refrigerate overnight.
Uncover and bake in 350 degree F oven 45 minutes. Serve with fresh fruit and syrup (optional).
NOTES: Tried this with a layer of drained sliced, canned nectarines over the caramel…Oh, my. Next time will try Granny Smith apples.

Cornmeal Pancakes
1 cup cornmeal
1/2 cup flour
1/2 teaspoon salt
2 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
2 eggs
1 1/4 cups buttermilk
2 tablespoons melted butter
Sift dry ingredients together. Beat eggs, add buttermilk and melted butter. Add to the meal and beat to make a smooth batter. Let stand 10 minutes, then drop by large tablespoon onto a lightly greased, medium-hot griddle. Cook until brown on each side, turning once, and serve with butter, jam, fruit sauce, honey or syrup.

Pineapple Upside-Down French Toast
1/4 cup unsalted butter
1/4 cup firmly packed dark brown sugar
10 ounces well-drained, canned crushed
pineapple, in juice, reserving juice
2 large eggs
1 cup milk
1/4 cup half-and-half or cream
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/4 teaspoon vanilla extract
8 (1-inch thick) slices French, Italian or sourdough bread
Preheat oven to 400 degrees F.
In a saucepan, melt butter over moderate heat and stir in sugar until dissolved. Add pineapple, stirring well to incorporate.
In a bowl, whisk together eggs, milk, half and half, reserved pineapple juice, salt, cinnamon and vanilla extract.
Lightly grease a 13 x 9-inch baking dish and spread pineapple mixture evenly over bottom. Dip bread slices into milk mixture and arrange in one layer on top of pineapple mixture. Bake French toast in middle of oven for 20 to 25 minutes or until bread is golden.
French Toast can be made a day ahead of time, covered with plastic wrap and stored in the refrigerator.

Apple Coffee Cake
1/2 cup butter or margarine, softened
2 cups granulated sugar
4 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
5 cups peeled and chopped apples
1 teaspoon vanilla extract
1 1/2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Beat butter at medium speed of electric mixer. Gradually add sugar; beat well. Add eggs, one at a time, beating after each addition.
Combine flour, baking powder and salt; add to creamed mixture. Stir in apple and vanilla extract. Spoon batter into a greased and floured 13 x 9-inch pan.
Combine sugar and ground cinnamon; sprinkle over cake batter. Bake at 350 degrees F for 45 minutes or until a wooden pick inserted in center comes out clean.
Serve warm or cool.

Cinnamon Swirl Coffee Cake

1 cup margarine
2 cups granulated sugar
4 eggs
3 cups all-purpose flour
3 teaspoons baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1 cup milk
2 teaspoons vanilla extract
2 tablespoons cinnamon mixed with 2 tablespoons
granulated sugar (save this for last step)
Cream the margarine with the sugar. Add the eggs, one at a time. Mixall the dry ingredients and add to the batter alternately with the milk. Add the vanilla extract. Pour half into an angel food pan, add the cinnamon/sugar mixture on top, then add the rest of the batter. Using a table knife swirl it around and through the batter. Bake in a 375 degree F oven for 60 minutes.

Union Pacific Apple Pancakes

Servings: 6
1 cup all-purpose flour
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 teaspoon melted butter
1/2 cup milk
1 beaten egg
1/2 teaspoon vanilla extract
1 1/4 cups homemade applesauce
Sift flour, salt and baking powder. Combine butter, milk and egg. Stir into flour. Add vanilla extract and applesauce. Beat well. Spoon batter onto a hot, well greased griddle, allowing enough batter to make 4-inch cakes. When edges are lightly browned, turn and cook on second side.
Serve hot with maple syrup or apple jelly and lots of butter.

Blueberry French Toast
12 slices firm day old bread, cubed
16 ounces cream cheese, cut into inch squares
1 cup blueberries
1 dozen eggs
2 cups milk
1/3 cup honey
Lightly grease 13 x 9-inch pan. Layer in this order: 1/2 bread cubes, all the cream cheese cubes, all the blueberries and remaining bread cubes on top.
Whisk eggs with milk and honey. Pour over bread, but do not stir. Cover and chill overnight.
Bake covered at 350 degrees F for 45 minutes. Bake uncovered for 25 to 30 minutes. The center will puff, turning golden brown.
Serve with Blueberry Sauce.
Blueberry Sauce
1 cup granulated sugar
2 tablespoons cornstarch
1 cup cold water
1 cup blueberries
1 tablespoon butter or margarine
In a saucepan over medium heat, bring sugar, cornstarch, and water to a boil, stirring constantly. Cook until clear. Stir in blueberries and butter, and simmer over low heat until berries burst, about 10 minutes. Drizzle on top of Blueberry French Toast.

Breakfast Patties
1/4 cup water
2 teaspoons salt
2 teaspoons rubbed sage
1 teaspoon pepper
1/2 teaspoon ground nutmeg
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon ground ginger
2 pounds ground pork
In a bowl, combine water and seasonings. Add pork and mix well. Shape into eight 4-inch patties.
In a skillet over medium heat, cook patties for 5 to 6 minutes on each side or until no longer pink in the centers.

Baked Marmalade Pancake
2 eggs
1/2 cup all-purpose flour
1/2 cup milk
1/4 teaspoon almond or vanilla extract
1/4 pound unsalted butter
6 tablespoons orange marmalade or any other citrus marmalade
2 tablespoons confectioners sugar
Preheat oven to 400 degrees F.
In a medium bowl, whisk the eggs, flour, milk and almond extract until blended. Melt butter in a large ovenproof skillet over moderate heat. Remove the skillet from the heat and pour in the batter, tilting to cover the bottom of the pan evenly. Immediately place in the oven and bake for 15 minutes, or until puffed and golden brown.
Transfer pancake to a serving plate, spread with the marmalade and dust with the confectioners sugar; serve immediately.
Serves 4.
