Cranberry Biscotti
Source: Minneapolis Star and Tribune - 12/98
2 1/3 cups flour
1 cup granulated sugar
1 1/2 teaspoons baking powder
1 1/4 teaspoons cinnamon
1/2 teaspoon nutmeg
2 large eggs
2 large egg whites
1 tablespoon vanilla extract
1 1/2 cups fresh or frozen cranberries,
coarsely chopped
3/4 cup sliced almonds
Preheat oven to 325 degrees F.
Combine the flour, sugar, baking powder, cinnamon and nutmeg in a large mixing bowl.
Whisk the eggs, egg whites and vanilla extract together and add to the dry ingredients, mixing just until moist, using a hand mixer on medium speed. Add cranberries and almonds and mix thoroughly. Turn out onto a floured surface and divide batter in half. Pat each half into a log about 14 inches long and 2 inches wide. Place on a lightly greased cookie sheet and bake 30 minutes or until firm.
Reduce oven temperature to 300 degrees F. Leaving the baked log on the cookie sheet, cut crosswise into 1/2-inch slices. Turn the slices cut side up on the cookie sheet and return to the oven; bake for 40 to 45 minutes or until firm and dry.
Cool and keep in a tight container.
Makes about 2 1/2 dozen.
Each serving contains approximately 1 bread/ starch exch., 1/2 fat exch.; 85 calories, 15 gm. carbohydrate, 2 gm. protein, 2 gm. fat (including no sat. fat), 14 mg. cholesterol, 33 mg. sodium, 25 mg. calcium and 1 gm. dietary fiber

Bacon and Cheese Sandwich (George Foreman Grill)

4 strips bacon, cooked and drained
2 slices American cheese
2 slices bread
2 teaspoons butter
Lightly butter one side of the bread slices. Place cheese on the unbuttered side of one slice of bread. Place bacon strips over top of cheese. Cover with other slice of bread, buttered side up.
Place sandwich on George Foreman Grill and close lid. Grill 4 minutes or until golden brown and cheese is melted.

Jalapeno Cornbread
1 cup buttermilk
1 cup cornmeal
1 cup all-purpose flour
3 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
2 eggs
4 tablespoons melted shortening
1 cup cream-style corn
1 cup grated Cheddar cheese
3 diced jalape?o peppers or
1 can diced green chile peppers
1 (4 ounce) jar sliced pimento
If using green chile peppers, dice them.
Combine buttermilk and cornmeal. Let stand 30 minutes.
Preheat oven to 375 degrees F.
Add remaining ingredients. Mix well. Pour into a 13 x 9-inch greased pan and bake for 30 minutes.

Beef Stew Casserole
Yield: 8 servings
2 pounds beef (for stew), cut into bite-size cubes
1 1/2 cups thickly sliced carrots
2 onions, coarsely chopped
4 to 6 potatoes (about 2 pounds), peeled and cubed
1 cup chopped celery
2 teaspoons salt
1 teaspoon pepper
1 can condensed cream of mushroom soup
1 cup burgundy wine
1/2 cup water
1 dried bay leaf, crumbled fine
Preheat oven to 250 degrees F.
Combine the beef, carrots, onions, potatoes, celery, salt and pepper in a 4-quart, oven-safe casserole or baking dish.
Stir together the mushroom soup, wine, water and bay leaf. Pour over beef-vegetable mixture. Cover tightly. Bake for 5 hours.

Caramel Cake
1 pound margarine, softened
3 1/4 cups granulated sugar
10 eggs
4 cups all-purpose flour
2 teaspoons vanilla extract
Cream margarine and sugar well in very large bowl. Alternately add eggs, one at a time, and flour. Beat well. Add flavoring. Bake in 3 (9-inch) round prepared pans at 325 degrees F for 45 minutes. Cool; frost with caramel frosting.

Raspberry Macadamia Dessert
1 cup crushed vanilla wafers (about 32 wafers)
1/2 cup chopped macadamia nuts
1/4 cup butter, melted
1 can sweetened condensed milk
3 tablespoons orange juice
3 tablespoons lemon juice
1 (10 ounce) package frozen sweetened raspberries, thawed
1 (8 ounce) carton Cool Whip
Combine wafers, nuts and butter. Press onto bottom of a greased pie pan. Bake 8-10 minutes at 375 degrees F or until golden brown. Let cool.
In mixing bowl, beat milk, juices and raspberries on a low speed until well blended. Fold in Cool Whip. Pour over crust. Cover and freeze for 3 hours.
NOTE: May be frozen for up to 3 months. Remove from freezer 3 hours before serving. Garnish with whip topping and fresh raspberries or chocolate hearts.

P.F. Chang’s China Bistro Garlic Noodles
3 teaspoons minced garlic
3 teaspoons granulated sugar
2 tablespoons white vinegar
1 1/2 teaspoons red chile flakes
2 tablespoons canola oil
1 pound fresh Chinese noodle or vermicelli
1/2 teaspoon sesame oil
4 ounces Cantonese stir fry sauce (see recipe below)
1 Japanese cucumber or English cucumber
2 tablespoons chopped cilantro
Cantonese Stir Fry Sauce
3/4 cup water
1 tablespoon chicken base powder (no MSG)
1 tablespoon granulated sugar
2 tablespoons shaohsing wine or sherry
1 tablespoon oyster sauce
1/2 teaspoon salt
1 teaspoon cornstarch
Cook pasta. Rinse and cool down. Set aside. Toss in red chile flakes and cilantro.
Wash cucumber. Slice diagonally into 1/4" thick slices. Slice into strips. Set aside.
Heat wok thoroughly, add oil, then minced garlic. Stir fry briefly. Do not burn garlic or it will take on an acrid smell and taste. (If this happens, throw it out and start over.)
Add sugar and vinegar.
Add noodle to wok, stirring and tossing to mix until noodle is heated through.
Place on plates and surround with cucumber strips.
NOTE: Chinese noodle is available fresh frozen, and can be cooked like any fresh pasta. Bring water to boil, and noodles, separate. Drain and shock in cold water. Toss with salad oil. Uncooked fresh pasta can be frozen indefinitely.
Cantonese Stir Fry Sauce
1. Very concentrated. Use sparingly when stir frying vegetables or tossing with noodles.
2. Recipe doubles.
3. Refrigerates well, up to a month.
4. Stir thoroughly before using.

Scrambled Egg Cupcakes with Cheddar Cheese Frosting

Baskets
8 slices white bread, crusts removed
2 tablespoons butter or margarine, softened
Eggs
2 tablespoons butter or margarine
7 eggs, beaten
3 tablespoons chopped fresh chives or
1 1/2 teaspoons dried chives
Salt
8 (2 x 2-inch) squares sharp Cheddar cheese
Preheat oven to 350 degrees F.
To prepare baskets, flatten bread slices with rolling pin. Spread butter on one side of each slice. Press bread, buttered side down, into 8 muffin cups. Bake for 12-15 minutes or until lightly toasted.
Meanwhile, prepare eggs. Melt butter in large skillet. Add beaten eggs and chives and cook over medium low heat until softly scrambled. Season with salt, if desired.
When bread baskets are done, increase oven temperature to 475 degrees F.
Fill baskets with scrambled eggs, top each with a square of Cheddar cheese. Return to oven for about 2 minutes or until cheese is melted.

Smiling Skull Popcorn Treat

Serves 6 to 8.
You need a candy thermometer for this recipe.
12 cups popped popcorn
1 cup granulated sugar
1 cup light corn syrup
1/2 cup water
2 tablespoons butter, cut into thin slices
2 teaspoons caramel candy flavoring (optional)
(available in specialty food stores)
Black gumdrops
Place popcorn in buttered large oven-proof bowl. Place in oven at 170 degrees F to keep warm. (Remove bowl when ready to mix with cooked syrup.)
Lightly coat a skull-shaped pan with cooking spray or, if pan is unavailable, spray a double sheet of heavy-duty aluminum foil shaped into form of a skull. Set aside.
Combine sugar, corn syrup and water in 3-quart heavy saucepan. Add butter and place pan over medium heat, stirring with wooden spoon until all sugar dissolves. Wash down sides of pan with pastry brush dipped in hot water. Use candy thermometer and continue cooking until temperature reaches 240 degrees F. Remove from heat and stir in caramel candy flavoring.
Pour sugar mixture over warmed popcorn and toss with 2 forks until corn is evenly coated. Spread into prepared skull form and press slightly to hold popcorn together. Carefully unmold onto foil-covered board or cookie sheet. Set aside to completely harden.
To decorate, use rolling pin and roll out black gumdrops. Cut out gumdrops to form eyes, nose and mouth.

Old-Fashioned Coconut Pie
1 (9 1/2-inch) pie shell, unbaked
1 1/2 cups granulated sugar
2 eggs
1/2 teaspoon salt
1/2 cup margarine, softened
1/4 cup flour
1/2 cup milk
1 1/2 cups grated fresh coconut, divided
Prepare unbaked pie shell.
Beat together sugar, eggs and salt until lemon-colored. Add margarine and flour and blend well. Beat in milk; fold in 1 cup coconut. Pour filling into pie shell. Top with remaining coconut and bake at 325 degrees F for 1 hour.
