Fig Bread

3 eggs
2 1/2 cups granulated sugar
2 cups ripe figs, mashed
3/4 cup peanut oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup buttermilk
1 cup chopped pecans

Beat eggs, add sugar and beat well. Add fig puree and oil. Sift together flour, baking soda, salt and cinnamon. Add the fig mixture alternately with the buttermilk. Beat well. Fold in pecans. Bake at 350 degrees for 1 hour in greased and floured loaf pans.

Makes 3 loaves.

Apple Cheese Bread

1/4 cup butter
1/4 cup shortening
2/3 cup granulated sugar
2 eggs, beaten
1 1/2 cups grated or ground cooking apples, including juice
1/2 cup grated sharp Cheddar cheese
1/4 cup chopped walnuts
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 350 degrees F.

Cream butter, shortening and sugar. Add beaten eggs and mix well. Add apples, cheese and nuts. Add sifted dry ingredients and mix lightly. Bake in a greased 9 x 5-inch loaf pan for 50 to 60 minutes or three 3 x 6-inch loaf pans for 30 to 35 minutes.

Beer Bread

2 cups self-rising flour
1 (12 ounce) can beer
3 tablespoons granulated sugar

Combine all ingredients well. Spoon into a greased loaf pan and bake at 350 degrees F for 25 minutes. Drizzle melted butter over top. Serve hot.

    blueberry corn bread

    Blueberry Corn Bread

    1 3/4 cups yellow cornmeal
    1 1/4 cups all-purpose flour
    1 tablespoon baking powder
    1/2 teaspoon salt
    1 1/4 cups blueberries, washed and dried
    1/3 cup granulated sugar
    2 large eggs, beaten lightly
    4 tablespoons butter, melted and cooled
    1 1/2 cups milk

    Butter and lightly flour a 13 x 9-inch baking pan. Preheat the oven to 425 degrees F.

    Combine cornmeal, flour, baking powder and salt in a large shallow bowl. Sprinkle 2 to 3 tablespoons of the dry ingredients over the blueberries and toss lightly. Stir sugar into the dry mixture, then stir in the eggs, butter and milk. Add the blueberries and mix lightly. Turn into the prepared pan. Bake 25 to 30 minutes, until a wooden pick inserted near the center comes out clean.

    Cool 10 minutes in the pan, then turn out onto a plate and slice or cut into squares. Serve hot or warm with butter.

    1 cup chopped nuts
    2 1/2 cups granulated sugar
    5 cups all-purpose flour
    1 teaspoon salt
    1 teaspoon baking powder
    1 teaspoon cinnamon
    1 1/2 cups vegetable oil
    3 eggs
    3 bananas, mashed
    1 teaspoon lemon juice
    1 can crushed pineapple, drained

    Mix together dry ingredients. Mix together liquid ingredients, combine. Bake at 350 degrees for 1 hour.
